NIEUW
Backside of a mountain, 2025
A two-week maceration of destemmed Pinot Noir from our friends Bannwarth in Obermorschwihr, Alsace. We destemmed the Pinot Noir, selected only the most beautiful berries and started, after another sorting of the berries, the maceration in a little bit of juice from directly pressed Chardonnay from Domaine du Mazel. This Chardonnay had already started its fermentation, something which helped us to make a shorter, but intense extraction
of the Pinot Noir. The idea was to preserves the primary flavor profile of the Pinot, the dark red berries, the earthy mushroom-ness and all the floral notes of roses, violets and even thymes.
It's also for that reason, the idea of preserving the primary flavors, we’ve bottled the wine young. The full fermentation and following shot élevage have been in a fiberglass cuve, something we only rarely do, even with our reds and almost never with our whites. This might make it sound like this wine is a simple red, but the complexity of this wine is obvious and outspoken, its origine of Alsace speaks very well for itself.
